Nose to Tail Dinner start:18:00 ** NOT LIVE ** Celebrate new beginnings, New Year intentions, celebrating a more sustainable way of living with a thoughtful 5 course 'Nose to Tail' dinner in the award-winning Grain Store Restaurant at Doddington Hall. After the gifts and treat of Christmas many of us seek to reset our habits in the New Year. This can mean trying to live more sustainably, leaving a lighter footprint on the world. But how to do that with food. One way is to eat food that is local, with few food miles, and grown in a way that regenerates soil, stores carbon, supports local economies and celebrates nature. If you love nature then you need to love landscapes that are grazed. We need a mosaic of complex ever shifting landscapes, cycling between short grazed flower rich swards, scrublands and woodlands with water being stored, cleaned moving dynamically across the land. Here at Doddington we are Pasture for Life (PfL) members, and our grazing animals, kept at very low density create innumerable tiny habitats for nature to thrive. When you think about local wildlife sites you realise that many also keep a few animals to maintain or create habitats. The key is the way the animals are managed. Conrad, executive head chef, has designed a sophisticated menu to truly showcase unusual cuts. Nose to tail does not mean tripe and overly strong flavours. For our celebratory meal it means farming more regeneratively and using more of the cuts, reducing waste and using modern cooking techniques.
